No Bake Baileys Chocolate Cheesecake

Ingredients:

• Oreo Crust:
  • 35 Oreos (crushed)
  • 5 tbsp butter, melted
• Chocolate Baileys Filling:
  • 24 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 3 tbsp cocoa powder
  • 6 tbsp Baileys Irish Cream
  • 8 oz semi-sweet chocolate, melted
  • 1 1/4 cups heavy whipping cream, cold
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
• Baileys Ganache Topping:
  • 7 oz white chocolate chips
  • 3 1/2 tbsp Baileys Irish Cream
  • 1 tbsp heavy whipping cream
• Whipped Cream:
  • 1/2 cup heavy whipping cream, cold
  • 2 tbsp Baileys Irish Cream
  • 2 tbsp cocoa powder
  • 1/4 cup powdered sugar

Directions:

1. Crust:
   1. Combine crushed Oreos and melted butter, press into a 9-inch springform pan, and chill.
2. Filling:
   1. Beat cream cheese with sugar and cocoa. Add Baileys and melted chocolate. Fold in whipped cream made from whipping cream, powdered sugar, and vanilla. Add filling over crust and refrigerate until firm.
3. Ganache:
   1. Mix Baileys and cream, heat, then pour over white chocolate chips, whisk until smooth. Cool slightly, then spread over chilled cheesecake.
4. Whipped Cream:
   1. Whip cream with Baileys, cocoa, and powdered sugar and pipe onto the cheesecake.
