  • 4 eggs

Instructions:

  1. Melt the Chocolate: In a heatproof bowl, melt the dark chocolate either over a double boiler or in the microwave until smooth. Allow it to cool slightly.
  2. Separate the Eggs: Carefully separate the egg whites from the yolks. Place the whites in a large mixing bowl and set aside.
  3. Incorporate the Yolks: Gradually add the egg yolks to the melted chocolate, stirring quickly to ensure they blend smoothly without cooking. For enhanced flavor, incorporate vanilla or rum extract at this stage.
  4. Beat the Egg Whites: Using an electric mixer, beat the egg whites along with a pinch of salt until stiff peaks form.
  5. Fold in the Egg Whites: Gently fold the beaten egg whites into the chocolate mixture using a spatula, ensuring a uniform consistency while being careful not to deflate the whites.
  6. Optional: Add Sour Cream: For an indulgently creamy texture, gently fold in thick sour cream into the chocolate mixture.
  7. Refrigerate: Divide the chocolate mousse into individual serving glasses or a large dish. Chill in the refrigerator for at least 2 hours, allowing it to set and develop its flavors.
  8. Optional Decoration: Prior to serving, garnish the mousse with chocolate shavings, a dusting of cocoa powder, or fresh fruit for an elegant touch.
