Tasty Soul Food Recipes: Cowboy Meatloaf and Potato Casserole

Ingredients:

  • ¾ cup chopped onion
  • ⅓ cup dried bread crumbs
  • 1 pound lean ground beef
  • ¼ cup your favorite barbecue sauce
  • 2 tsp chili powder
  • ¾ tsp salt
  • 1 egg, beaten

Potatoes:

  • 1 package instant butter-flavored mashed potato mix
  • ⅔ cup evaporated milk
  • 1 tbsp chopped parsley
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 cup cooked and crumbled bacon
  • ¼ cup crispy fried onions
  • ⅔ cup shredded Monterey Jack cheese

Instructions:

  1. Preheat the oven to 375°F and lightly spray a 9×9 baking pan.
  2. In a large bowl, mix together the ground beef, onion, barbecue sauce, bread crumbs, beaten egg, chili powder, and salt.
  3. Press the meat mixture into the bottom of the prepared pan.
  4. Bake uncovered for 20 minutes.
  5. Remove from the oven and carefully drain off any excess grease.
  6. In another bowl, prepare the instant mashed potatoes according to package instructions, using evaporated milk. Stir in parsley, butter, garlic powder, bacon, and crispy fried onions.
  7. Spread the potato mixture evenly over the cooked meat layer.
  8. Sprinkle shredded cheese, bacon, and dried onions over the top.
  9. Place under the broiler, about 6 inches from the heat source, and broil for 3 minutes, or until the cheese is melted and bubbly.
  10. Serve with additional barbecue sauce on the side, if desired.
