Ingredients:

  • 4 cups sifted flour (500 g)
  • 4 tablespoons baking powder
  • 4 cups warm milk (960 mL)
  • ¾ cup melted butter (170 g)
  • 3 egg yolks
  • 4 egg whites
  • Toppings such as syrup, Nutella, lemon juice/sugar.

Instructions 🥣

  1. In a large bowl, whisk together the sifted flour and baking powder.
  2. In another bowl, combine the melted butter, warm milk, and egg yolks, stirring until well mixed.
  3. In a third bowl, beat the egg whites with a hand mixer until soft peaks form.
  4. Pour the milk mixture into the flour mixture and stir with a rubber spatula until just blended. Then, gently fold in the beaten egg whites.
  5. Heat an 8-inch (20 cm) nonstick skillet over low heat. Pour 1 ½ cups of pancake batter into the skillet, smoothing out the top, and cover with a lid.
  6. Cook until the pancake is golden brown on the bottom and a toothpick inserted into the center comes out clean, approximately 20 minutes.
  7. Transfer the pancake to a plate and repeat the process to make three more pancakes with the remaining batter.
