Mom’s Legendary Cream Puffs

Ingredients:

  • 1 stick of butter
  • 1 cup of water
  • 1 tsp vanilla extract
  • 1 cup of all-purpose flour
  • 4 eggs

Mom’s Signature Filling:

  • 1 pint of heavy cream
  • 1 package (3.4 ounces) of instant vanilla pudding mix
  • 1/3 cup of milk

Instructions:

  1. In a saucepan, bring water, butter, and vanilla extract to a boil.
  2. Add flour to the boiling mixture and stir constantly until it forms a ball and leaves the sides of the pot. Remove from heat and let it cool.
  3. Beat in the eggs, one at a time, until the mixture is smooth.
  4. Drop spoonfuls of the mixture onto parchment-lined cookie sheets, making 8 large ones. Bake at 400 degrees Fahrenheit for approximately 40 minutes.
  5. (Pro tip: After baking, poke each puff with a toothpick and return them to the oven with it turned off, cracking the door open slightly to prevent deflating.)
  6. Allow the cream puffs to cool completely.
  7. Slice each puff in half and fill with Mom’s special filling using a piping bag or scoop.
  8. Dust with powdered sugar or drizzle with melted chocolate.

Filling Instructions:

In a mixer, beat heavy cream, instant vanilla pudding mix, and milk together until thick.
