Ingredients:

  • 4 beef tenderloin steaks (approximately 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup brandy or cognac
  • 1/4 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste

Directions:

Prepare the Steaks:

  1. Season the beef tenderloin steaks generously with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the steaks to the skillet, cooking for approximately 3-4 minutes per side for medium-rare, or until your preferred level of doneness is reached. Remove the steaks from the skillet and set them aside to rest.

Make the Sauce:

  1. In the same skillet, melt the butter over medium heat.
  2. Add the finely chopped onion and cook until softened, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Carefully pour in the brandy or cognac, allowing it to simmer for about 1-2 minutes to slightly reduce.
  5. Stir in the beef broth, heavy cream, Dijon mustard, and Worcestershire sauce. Continue cooking for another 3-4 minutes, stirring frequently, until the sauce has thickened.

Combine and Serve:

  1. Return the steaks to the skillet, spooning the rich sauce over them.
  2. Cook for an additional 1-2 minutes to ensure the steaks are heated through.
  3. Garnish with freshly chopped parsley.
  4. Serve the Steak Diane hot, generously drizzled with the luxurious sauce. Pair with your favorite sides for an elegant and delightful dining experience.
