Lemon Blueberry Loaf Recipe

Ingredients

  • 1 ½ cups plus 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp salt
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

Lemon Glaze/Syrup

  • 2 to 3 tbsp lemon juice
  • 1 cup sifted confectioner’s sugar

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing the sides and bottom.
  3. Sift together all the dry ingredients (flour, baking powder, and salt) in a bowl.
  4. In a large mixing bowl, combine the wet ingredients: eggs, sugar, yogurt or sour cream, vanilla extract, vegetable oil, and lemon zest.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  6. In a separate bowl, toss the blueberries with the reserved tablespoon of flour, then gently fold them into the batter.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a cooling rack.
  10. While the loaf cools, prepare the glaze. In a small saucepan over low heat, dissolve the confectioner’s sugar in the lemon juice and simmer for about 3 minutes.
  11. Poke holes all over the loaf with a toothpick, then use a pastry brush to apply the lemon syrup to the top and sides of the loaf.
  12. Allow the glaze to set for about 15 minutes before serving.
