Slow Cooker Cheese-Stuffed Meatballs Recipe

Ingredients:

  • 500g ground beef
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup freshly chopped parsley
  • 1/2 cup milk
  • 2 eggs
  • 2 x 500g jars of pasta sauce
  • Cheese cubes (mozzarella or cheddar recommended)

Directions:

Prepare the Meatball Mixture:

  1. In a large mixing bowl, combine the ground beef, garlic powder, breadcrumbs, Parmesan cheese, parsley, milk, and eggs.
  2. Season with salt and pepper to taste.
  3. Mix thoroughly until all ingredients are well incorporated.

Form the Cheese-Stuffed Meatballs:

  1. Take a small portion of the meat mixture and flatten it in the palm of your hand.
  2. Place a small cube of cheese in the center.
  3. Encase the cheese with the meat, rolling it into a ball. Ensure the cheese is fully enclosed to prevent leakage during cooking.

Prepare the Slow Cooker:

  1. Pour one jar of pasta sauce into the bottom of the slow cooker.

Add the Meatballs:

  1. Place the formed meatballs on top of the sauce in the slow cooker, ensuring they are not touching each other.

Cook the Meatballs:

  1. Pour the second jar of pasta sauce over the meatballs, ensuring they are completely covered.
  2. Cover the slow cooker and set it to cook on HIGH for 2.5 hours.

Serving:

  1. Once the meatballs are cooked through and the cheese inside is melted, they are ready to serve.
  2. Enjoy the meatballs with spaghetti, a side of garlic bread, or on their own.
