Salwaa’s Vetkoek Recipe

Yield: 20 Vetkoeks

Ingredients:

  • 4 cups cake flour
  • ¼ cup oil
  • ¼ teaspoon salt
  • 1 dessert spoon sugar
  • 1 packet instant yeast
  • Approximately 200ml lukewarm water (adjust as needed)
  • Oil for frying

Method:

  1. In a large mixing bowl, combine the flour, salt, sugar, and yeast.
  2. Create a well in the center of the dry ingredients and add the oil and lukewarm water.
  3. Mix the ingredients to form a soft dough.
  4. Knead the dough for 5-10 minutes until smooth and elastic.
  5. Cover the bowl with cling wrap and set aside in a warm place until the dough doubles in size.
  6. Once risen, punch down the dough and shape it into small balls.
  7. Heat the oil in a deep saucepan over moderate to high heat.
  8. Fry the dough balls until golden brown, ensuring they cook through evenly.
  9. Drain the fried vetkoeks on absorbent paper.
  10. Serve with mince curry, dhal, or any preferred accompaniment.

Note: For a smaller batch, halve the recipe. Enjoy your delicious, homemade vetkoeks!
