Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions for Baked Sweet and Sour Chicken

  1. Preheat the Oven: Set your oven to 325°F (163°C). Line a 13 x 9-inch baking pan with parchment paper and set it aside.
  2. Prepare the Chicken: Season the chicken pieces with salt and pepper. Place the cornstarch in a large ziplock bag, add the chicken pieces, and shake well to coat.
  3. Coat with Egg: In a shallow bowl, beat the eggs. Heat the vegetable oil in a skillet over medium-high heat until it sizzles. Dip each chicken piece in the beaten eggs and then place them in the hot skillet. Sear the chicken until golden brown on all sides, then transfer the pieces to the prepared baking pan.
  4. Make the Sauce: In a medium bowl, combine the granulated sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Whisk until well blended.
  5. Bake the Chicken: Pour the sauce over the chicken in the baking pan. Bake for 1 hour, stirring halfway through to ensure the chicken is evenly coated with the sauce.
  6. Serve: Once baked, serve the sweet and sour chicken over a bed of rice.
