Irresistible Cream Cheese Spinach Puffs: Perfect Party Appetizers

Ingredients:
- 1 sheet puff pastry
- 7 oz baby spinach
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 8 oz cream cheese
- 1/2 cup mozzarella cheese
- 1 egg
- 1 egg yolk
- 1 pinch salt
- 1 pinch black pepper
Instructions:
- Preheat and Prep:
- Preheat your oven to 400°F (200°C).
- Line a baking tray with parchment paper.
- Sauté the Spinach:
- Heat a pan over medium heat and add olive oil.
- Once hot, sauté the minced garlic for about 2 minutes until it softens.
- Add the baby spinach to the pan, season with a pinch of salt and pepper, and sauté until the spinach is wilted.
- Remove the pan from heat and let the spinach cool.
- Prepare the Puff Pastry:
- Cut the puff pastry sheet into either 6 large squares or 12 smaller squares, based on your preference.
- Place the squares on the lined baking tray.
- Make the Filling:
- In a mixing bowl, combine the sautéed spinach, cream cheese, mozzarella cheese, and one egg.
- Season the mixture with a pinch of salt and pepper, then mix thoroughly.
- Assemble the Puffs:
- Spoon the spinach mixture onto the center of each puff pastry square.
- Fold two opposite edges of each square towards the center and press them together firmly to seal.
- Bake:
- Brush the tops of the puffs with egg yolk for a golden finish.
- Bake in the preheated oven for 25 to 35 minutes, or until the puffs are golden brown.
