Pistachio Pineapple Cake
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup chopped pistachios
- 1 cup crushed pineapple, drained
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour, baking powder, and salt.
- In a separate bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the flour mixture to the creamed butter and sugar, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
- Gently fold in the chopped pistachios and drained pineapple.
- Pour the batter into a greased and floured 9-inch cake pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
