Cajun Fried Shrimp

Cajun Fried Shrimp
Ingredients:
For Crunchy Shrimp:
- 12 large raw prawns, peeled with tails intact
- ½ cup vegetable oil
- 1 cup all-purpose flour
- ½ teaspoon fresh lemon zest
- ½ teaspoon salt
- 1 ½ teaspoons Cajun spice
- 1 large egg
- 1 tablespoon milk
- 1 cup panko breadcrumbs
For Cajun Sauce:
- ½ cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon ketchup
- 1 teaspoon Cajun seasoning
Instructions:
For Cajun Sauce:
In a bowl, combine mayonnaise, sour cream, ketchup, and Cajun seasoning. Whisk together and set aside.
For Cajun Crunchy Shrimp:
- In a bowl, mix flour, salt, lemon zest, and Cajun seasoning.
- In another bowl, beat egg and milk together.
- Place panko breadcrumbs on a plate.
- Arrange the stations in a line: flour mixture, egg mixture, panko breadcrumbs, and a clean plate at the end.
- With one hand, coat shrimp in flour mixture, then dip into egg mixture, and finally coat with panko breadcrumbs. Press gently to ensure even coating.
- Heat vegetable oil in a cast iron skillet until it reaches about an inch in depth.
- Test oil readiness by sprinkling a few breadcrumbs into it. If they sizzle, the oil is ready.
- Fry the shrimp in batches, being careful not to overcrowd the pan, for about 90 seconds per side or until golden brown and crispy.
- Transfer the fried shrimp to a plate lined with paper towels to drain excess oil.
- Serve the Cajun fried shrimp hot with the prepared Cajun sauce on the side. Enjoy!
