Tomato Sauce (Serves 4)
Ingredients:
- 3 pounds ripe tomatoes, finely chopped
- 3 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 3 tbsp minced fresh basil
- Salt and black pepper to taste
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add the onion and cook for 5 minutes until softened.
- Add the garlic and cook until fragrant, about 1 minute.
- Transfer the tomato, onion, and garlic mixture to a slow cooker. Add red pepper flakes, dried oregano, and ½ tsp salt. Stir to combine.
- Cover and cook on low for 10-12 hours.
- Stir in the fresh basil.
- Season with salt and black pepper. If the sauce is too acidic, add a bit of honey and adjust the seasoning.
- Serve immediately or store in clean jars. Refrigerate for up to 1 week or freeze for up to 6 months.
Cauliflower Purée
Ingredients:
- 1 large head cauliflower, cut into florets (about 3 pounds or 1.5 kg)
- 3 tbsp unsalted butter
- 3 tbsp sour cream
- 6 garlic cloves, divided
- 1/4 cup parmesan cheese
- Salt and black pepper to taste
Instructions:
- Place cauliflower in a steamer over boiling water and steam for 15 minutes until tender. Alternatively, boil in salted water for 10 minutes until fork-tender. Drain and set aside.
- In the same pot, heat the butter over medium-high heat and sauté the garlic until fragrant, about 1 minute.
- In a food processor, blend the cauliflower and garlic until smooth. This may need to be done in batches.
- Return the puréed cauliflower to the pot. Stir in the Parmesan cheese and sour cream. Season with salt and black pepper.
