Tomato Sauce (Serves 4)

Ingredients:

  • 3 pounds ripe tomatoes, finely chopped
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 3 tbsp minced fresh basil
  • Salt and black pepper to taste

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add the onion and cook for 5 minutes until softened.
  3. Add the garlic and cook until fragrant, about 1 minute.
  4. Transfer the tomato, onion, and garlic mixture to a slow cooker. Add red pepper flakes, dried oregano, and ½ tsp salt. Stir to combine.
  5. Cover and cook on low for 10-12 hours.
  6. Stir in the fresh basil.
  7. Season with salt and black pepper. If the sauce is too acidic, add a bit of honey and adjust the seasoning.
  8. Serve immediately or store in clean jars. Refrigerate for up to 1 week or freeze for up to 6 months.

Cauliflower Purée

Ingredients:

  • 1 large head cauliflower, cut into florets (about 3 pounds or 1.5 kg)
  • 3 tbsp unsalted butter
  • 3 tbsp sour cream
  • 6 garlic cloves, divided
  • 1/4 cup parmesan cheese
  • Salt and black pepper to taste

Instructions:

  1. Place cauliflower in a steamer over boiling water and steam for 15 minutes until tender. Alternatively, boil in salted water for 10 minutes until fork-tender. Drain and set aside.
  2. In the same pot, heat the butter over medium-high heat and sauté the garlic until fragrant, about 1 minute.
  3. In a food processor, blend the cauliflower and garlic until smooth. This may need to be done in batches.
  4. Return the puréed cauliflower to the pot. Stir in the Parmesan cheese and sour cream. Season with salt and black pepper.
