Tater Tot Sausage Breakfast Casserole
Ingredients:
- 8 eggs
- 1 pound pork sausage (e.g., Jimmy Dean)
- 1 1/2 cups whole milk or heavy cream
- 1 package of frozen tater tots (approximately 24 oz)
- 2 cups cheddar cheese
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp garlic powder
Directions:
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly spray a 9×13 inch pan with nonstick cooking spray.
- Cook Sausage: In a skillet over medium heat, cook the sausage until browned, breaking it into small pieces as it cooks. Drain any excess grease and set the cooked sausage aside.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, heavy cream (or whole milk), salt, black pepper, and garlic powder until well combined.
- Assemble Casserole:
- Layer the frozen tater tots evenly at the bottom of the prepared pan.
- Evenly distribute the cooked sausage over the tater tots.
- Sprinkle the cheddar cheese on top of the sausage layer.
- Pour the whisked egg mixture evenly over the entire dish.
- Bake:
- Cover the casserole dish with foil to prevent the edges from cooking too quickly.
- Bake in the preheated oven for 40 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes, or until the eggs are fully cooked in the center. Check for doneness around the 40-45 minute mark as oven times may vary.
- Serve: Serve the casserole hot, optionally garnished with sour cream, diced tomatoes, salsa, or crispy bacon.
Note: If you purchase a 32 oz bag of tater tots, you will have some leftover.
