Ingredients:
- 1 zucchini (350g)
- 1 carrot
- 2 eggs
- 100 grams of cheese
- Parsley
- 1 potato
- 1 clove of garlic
- Salt
- Black pepper
- 1 tsp Herbes de Provence
- Paprika
- 4 tablespoons oatmeal
- 2 tbsp flour
- Olive oil
Instructions:
- Grate the zucchini, carrot, potato, and cheese into a large bowl.
- Mince the garlic and chop the parsley, then add them to the bowl.
- Crack the eggs into the mixture and stir well.
- Season with salt, black pepper, Herbes de Provence, and paprika to taste.
- Add the oatmeal and flour, mixing until well combined.
- Heat a generous amount of olive oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the pan, flattening them slightly with the back of a spoon.
- Fry each side for 4-5 minutes, or until golden brown and crispy.
For the Sauce:
- 2 tablespoons sour cream or yogurt
- 1 tbsp mayonnaise
- Dill
- 1 tsp dried garlic
- 1 tsp smoked paprika powder
Instructions:
- In a small bowl, mix together the sour cream or yogurt, mayonnaise, dill, dried garlic, and smoked paprika powder.
- Serve the zucchini and oatmeal patties hot with the prepared sauce on the side.
