Emaurans Fourie’s Award-Winning Recipe: Marmite Biltong and Cheese Muffins
Ingredients:
- 150 g Biltong, finely chopped
- 3 tbsp Butter, melted
- 2 cups Cake flour
- 2 tsp Baking powder
- 2 tbsp Sugar
- 2 Eggs
- 1 cup Milk
- 1 cup Cheddar cheese, grated
- 3 tbsp Marmite
- Handful of chopped fresh chives
Instructions:
- Preheat your oven to 190Β°C (375Β°F) and grease your muffin tins with butter.
- Mix the melted butter and chopped chives together and set aside to cool slightly.
- In a bowl, combine the flour, baking powder, sugar, and a pinch of salt. Mix thoroughly with a spoon.
- In a separate large bowl, lightly whisk the eggs, milk, and Marmite together. Then, add the butter and chive mixture, grated cheese, and chopped biltong. Mix well to combine.
- Gradually add the flour mixture to the egg mixture, stirring gently with a spoon in a folding motion until just combined.
- Fill each muffin tin about two-thirds full with the batter. Bake for approximately 20 minutes or until the muffins are golden brown.
- Once baked, remove the muffins from the tins and allow them to cool on a wire rack.
