Cheesy Chicken Fritters

Ingredients:

  • 1.5 lb (700g) skinless, boneless chicken breast
  • 2 medium eggs
  • 1/3 cup (40g) almond flour
  • 1 cup (110g) shredded mozzarella cheese
  • 2 tbsp fresh basil, finely chopped
  • 2 tbsp chives, chopped
  • 2 tbsp parsley, chopped
  • 1/2 tsp garlic powder
  • Pinch of sea salt and fresh ground black pepper, to taste
  • 1 tbsp olive oil (or more for frying)

Instructions:

  1. Begin by chopping the chicken breast into tiny pieces on a cutting board, then transfer them into a large mixing bowl.
  2. To the bowl, add almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix thoroughly until well combined.
  3. Heat olive oil in a large non-stick pan over medium-low heat. Using an ice cream scoop or large spoon, scoop portions of the chicken mixture into the pan, gently flattening each to form a fritter. Avoid overcrowding; cook in batches (about 4 fritters per batch).
  4. Fry until both sides are golden brown, approximately 6-8 minutes in total. Maintain medium-low heat to ensure even cooking without burning the exterior.
  5. Serve hot with your favorite dipping sauce.

Note: Adjust the cooking time and heat as necessary to ensure the fritters are cooked through.
