Classic Lemon Lime Pie

Ingredients:

  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1 (14 oz.) can sweetened condensed milk
  • 4 large egg yolks
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 2 cups whipped cream

Instructions:

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine crushed crackers, melted butter, and granulated sugar. Mix until thoroughly combined and the mixture sticks together when pressed.
  3. Press the crust mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Freeze the crust for 10 minutes to set.
  5. Bake the crust on the middle rack of the oven for 20-25 minutes or until it turns golden brown.
  6. Allow the crust to cool slightly on a wire rack, about 10 minutes.

Step 2: Prepare the Filling

  1. In another bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, and lime juice until smooth and well combined.
  2. Pour the filling into the baked crust.

Step 3: Bake and Chill

  1. Return the pie to the oven and bake until the center of the filling is just set, about 15 minutes.
  2. Cool the pie on a wire rack at room temperature for 1 hour.
  3. Refrigerate the pie until thoroughly chilled, at least 2 hours or overnight.

Step 4: Serve

  1. Just before serving, spread whipped cream evenly over the top of the pie.
  2. Garnish with fresh citrus slices if desired.
