Easy Peanut Butter Brownie Bites

Ingredients:

  • 2 (15 oz) packages brownie mix (any brand)
  • 2 eggs
  • 6 tablespoons vegetable oil
  • 1/2 cup creamy peanut butter
  • 2 tablespoons butter, softened
  • 3/4 cup powdered sugar
  • 1 cup chocolate chips (dark or semi-sweet)

Equipment Needed:

  • Mini muffin pan
  • Mini muffin liners (optional)
  • Stand or hand mixer
  • Mixing bowl
  • Spoon
  • Fork (optional)
  • Microwave-safe bowl (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with mini muffin liners.
  2. Make the brownie batter: Follow the instructions on the brownie mix package to prepare the batter,
using the specified amount of eggs and oil.
  3. Pour batter: Divide the batter evenly among the prepared muffin cups, filling them about halfway
    full.
  4. Bake brownies: Bake for 10-12 minutes, or until a toothpick inserted into the center comes out with
    moist crumbs.
  5. Make peanut butter filling: While the brownies are baking, cream together the peanut butter, softened
butter, and powdered sugar in a mixing bowl using a mixer until smooth. Roll the peanut butter mixture
    into small balls.
  6. Assemble: Once the brownies are baked, immediately press a peanut butter ball into the center of each
warm brownie. Let the brownies cool slightly in the pan for a few minutes before transferring them to a
    wire rack to cool completely.
  7. Optional chocolate drizzle: If desired, melt the chocolate chips in a microwave-safe bowl in 30-second
intervals, stirring after each interval, until smooth and melted. Drizzle the melted chocolate over the
cooled brownie bites using a fork.
  8. Chill and enjoy: For a firmer chocolate drizzle, refrigerate the brownie bites until the chocolate has
    set. Enjoy!

Tips:

– You can substitute any brand of brownie mix for this recipe. Just be sure to follow the package
instructions.
– For variation, try using different types of chocolate chips or adding chopped nuts to the peanut butter
filling.
