White Cheese Chicken Lasagna
Ingredients:
- 9 lasagna noodles
- 1/2 cup (1 stick) butter
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup all-purpose flour
- 2 cups chicken broth
- 1 1/2 cups milk
- 1 teaspoon salt
- 4 cups shredded mozzarella cheese, divided
- 1 cup grated Parmesan cheese, divided
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 2 cups ricotta cheese
- 2 cups cubed, cooked chicken meat
- 2 (10-ounce) packages frozen chopped spinach, thawed and drained
- 1 tablespoon chopped fresh parsley
Directions:
Preparation:
- Preheat your oven to 350°F (175°C).
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles until al dente, about 8 to 10 minutes. Drain and rinse with cold water.
Make the Sauce:
- In a large saucepan, melt butter over medium heat. Add chopped onion and minced garlic, cooking until tender, about 2 minutes.
- Whisk in flour until lightly browned, then gradually add chicken broth, milk, and salt. Cook and whisk continuously for 1 minute until thickened.
- Stir in 2 cups mozzarella cheese and 1/4 cup Parmesan cheese until smooth. Season with basil, oregano, and black pepper. Remove from heat and set aside.
Assemble the Lasagna:
- Spread 1/3 of the sauce mixture evenly on the bottom of a 9×13-inch baking dish.
- Layer with 3 lasagna noodles, half of the ricotta cheese, and half of the cooked chicken.
Continue Layering:
- Add another layer of 3 lasagna noodles, 1/3 of the sauce mixture, all of the spinach, remaining 2 cups mozzarella cheese, and 1/2 cup Parmesan cheese.
Final Layer:
- Top with the remaining lasagna noodles and spread the remaining sauce evenly over the top. Sprinkle with chopped parsley and the remaining 1/4 cup Parmesan cheese.
Bake:
- Bake in the preheated oven for 35 to 40 minutes, or until hot and bubbly.
