Chicken Meatballs with Rice: A Flavorful Delight

Ingredients

For the Meatballs:

  • 450g minced chicken
  • 1/2 cup bread crumbs
  • 1/4 cup grated onion
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • Olive oil (for cooking)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove moisture
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Meatball Mixture: In a large bowl, combine the minced chicken, bread crumbs, grated onion, minced garlic, chopped parsley, chopped mint, dried oregano, cumin powder, salt, black pepper, and egg. Mix well until all ingredients are thoroughly combined.
  3. Shape and Cook the Meatballs: Form the mixture into small meatballs, each about 5 cm in diameter, and place them on the prepared baking sheet. Drizzle the meatballs with olive oil. Bake in the preheated oven for 15-20 minutes, or until they are fully cooked and lightly browned.
  4. Prepare the Tzatziki Sauce: While the meatballs are baking, prepare the tzatziki sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Stir until well combined.
  5. Serve: Serve the Greek chicken meatballs with the tzatziki sauce while they are still hot. They are delicious when eaten with rice.
