Slow Cooker Hawaiian Pineapple Chicken

Indulge in the delightful flavors of this effortless crock-pot chicken dish! Perfectly paired over a bed of rice for a satisfying meal.

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 cups pineapple, cut into 1-inch chunks
  • 1 yellow onion, cut into 1-inch chunks
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1/2 cup dark brown sugar
  • 1 tablespoon grated ginger
  • 2 garlic cloves, minced
  • 2 teaspoons sesame seeds (optional)
  • 1 tablespoon cornstarch
  • 1 red bell pepper, cut into 1-inch chunks
  • Parsley, for garnish

Directions:

  1. In a skillet or the cast aluminum slow cooker insert, brown the chicken thighs on both sides for 3-5 minutes over high heat. Remove from the slow cooker and set aside.
  2. Place pineapple and onion at the bottom of the slow cooker.
  3. In a bowl, combine honey, soy sauce, brown sugar, grated ginger, and minced garlic. Pour the mixture over the pineapple and onion in the slow cooker.
  4. Carefully place the browned chicken thighs back into the slow cooker.
  5. Cook on low for 5 hours or on high for 3 hours, until chicken is tender and fully cooked.
  6. In a small bowl, mix cornstarch with a tablespoon of water until smooth. Stir the mixture into the slow cooker along with the bell peppers.
  7. Cover and cook for an additional 30 minutes on high, allowing the sauce to thicken.
  8. Serve the Hawaiian pineapple chicken over rice, garnished with sesame seeds and parsley.
