Recipe: Homemade Chocoflan

Ingredients:

  • 125g chocolate, melted
  • 80g butter, at room temperature
  • 3 medium eggs
  • 125g sugar
  • 80g wheat flour
  • 2 tablespoons pure cocoa powder
  • Pinch of salt

For the flan:

  • 300ml milk
  • 4 large eggs
  • 120g sugar

For the caramel:

  • 4 teaspoons sugar
  • 1 teaspoon water

Preparation:

  1. Prepare the Mold: Grease the mold with cooking spray or butter and flour. Pour the caramel mixture into the mold.
  2. Prepare the Chocolate Cake:
    • Melt the butter in the microwave. Add chopped chocolate to the melted butter and whisk until smooth. Microwave for a few seconds more if needed.
    • In a separate bowl, whisk eggs and sugar until pale. Add this mixture to the melted chocolate and butter. Stir with a spatula to combine.
    • Add flour, cocoa powder, and a pinch of salt to the chocolate mixture. Mix gently with a whisk on low speed to avoid incorporating air. Pour this batter into the prepared mold.
  3. Prepare the Flan:
    • In another bowl, beat eggs and sugar until pale and creamy. Gradually add milk while mixing with a spatula until well combined.
    • Pour the flan mixture gently over the chocolate batter in the mold, using the spatula to prevent splashing.
  4. Baking:
    • Preheat the oven to 180-190°C (356-374°F). Place the mold in a larger baking dish filled with hot water, ensuring the water reaches about halfway up the side of the mold.
    • Bake for approximately 1 hour and 15 minutes. If the top starts to brown too quickly, cover loosely with aluminum foil.
    • To check for doneness, insert a toothpick into the center; it should come out with a few moist crumbs, not wet.
    • Let the chocoflan cool in the mold, then invert onto a serving plate to unmold.
