Ingredients:
- 1 tablespoon oil
- 1 onion, diced
- 1 green bell pepper, diced
- 8 ounces mushrooms, diced
- 2 cloves garlic, chopped
- 2 pounds ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup cheese whiz (optional)
- 1 teaspoon Worcestershire sauce
- 2 tablespoons ketchup
- 2 eggs
- 1 cup panko breadcrumbs (gluten-free option available)
- 4 ounces provolone, sliced (optional)
- 8 slices provolone cheese
Directions:
- Heat the oil in a large pan over medium heat. Add diced onion, bell pepper, and mushrooms. Cook until tender, about 7-10 minutes.
- Add chopped garlic and cook until fragrant, about 1 minute. Remove from heat.
- In a large mixing bowl, combine ground beef, salt, pepper, cheese whiz (if using), Worcestershire sauce, ketchup, eggs, panko breadcrumbs, and the cooked onion, pepper, mushroom, and garlic mixture.
- Place half of the meat mixture into a baking dish, shaping it into a loaf shape. Lay slices of provolone cheese evenly over the meat mixture.
- Cover the cheese with the remaining meat mixture, ensuring to seal the edges well to encase the cheese. Shape the loaf as desired and place it on a baking sheet.
- Bake in a preheated oven at 350°F (180°C) until cooked through, about 50-60 minutes.
- Remove from the oven and arrange the remaining provolone slices over the top of the meatloaf. Return to the oven and broil until the cheese is melted and bubbly, about 2-4 minutes.
