Ingredients:

  • 200g self-raising flour
  • 200g caster sugar
  • 200g unsalted butter, softened
  • 4 large eggs
  • 1 tsp baking powder
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 150g strawberry jam
  • 250ml double cream, whipped
  • Icing sugar for dusting

Directions:

  1. Preheat your oven to 180°C (350°F). Grease and line two 20cm round cake tins.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Gradually add the eggs, one at a time, beating well after each addition.
  4. Sift the flour and baking powder into the mixture, and fold in gently.
  5. Stir in the milk and vanilla extract until the batter is smooth.
  6. Divide the batter evenly between the two prepared tins and smooth the tops.
  7. Bake for 20-25 minutes or until a skewer inserted into the center comes out clean.
  8. Allow the cakes to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
  9. Spread the jam over one of the cakes, top with the whipped cream, and then sandwich the second cake on top.
  10. Dust with icing sugar before serving.
