Grandma’s Quick Lentil Bread with Oatmeal
Ingredients:
- 250 grams lentils
- 700 ml water
- 100 ml water (for blending)
- 30 ml olive oil
- 2 tablespoons rice flour
- 1 teaspoon turmeric
- 1 tablespoon ground coriander
- 5 grams baking powder
- 2 tablespoons psyllium seeds
- 2 tablespoons long-cooked oatmeal flour
- Salt (to taste)
- 1 tablespoon lemon juice
- Vegetable oil (for greasing)
- A handful of sunflower seeds
- A handful of sesame seeds
Instructions:
- Prepare Lentils: Rinse 250 grams of lentils and soak them in 700 ml of water for 8 hours.
- Blend Lentils: After soaking, drain excess water and transfer lentils to a blender. Add 100 ml of clean water and blend until smooth. Incorporate 30 ml of olive oil into the blended lentils and continue blending until well combined.
- Combine Dry Ingredients: In a separate bowl, mix together rice flour, turmeric, ground coriander, baking powder, psyllium seeds, and oatmeal flour.
- Mix Wet and Dry Ingredients: Combine the dry ingredient mixture with the blended lentil mixture. Season with salt to taste and add 1 tablespoon of lemon juice. Mix until all ingredients are thoroughly combined into a dough-like consistency.
- Prepare Baking Pan: Preheat oven to 200°C (392°F). Grease a loaf pan with vegetable oil. Pour the prepared dough into the greased pan, spreading evenly.
- Add Seeds and Bake: Sprinkle sunflower seeds and sesame seeds on top of the dough in the pan. Bake in the preheated oven for 60 minutes, or until the bread is golden brown and cooked through.
- Prepare Yogurt Sauce: While the bread is baking, prepare a yogurt sauce by mixing Greek yogurt with chopped cucumber, dill, garlic, and salt to taste.
- Serve: Allow the lentil bread to cool in the pan before slicing. Serve slices of lentil bread with the refreshing yogurt sauce on the side.
