Kouti Recipe: Delicate Yemeni Pastries

Ingredients:

  • 2 cups of water
  • 1 cup of sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon of active dry yeast
  • 7g of instant yeast
  • 7g vanilla sugar
  • 1 egg
  • 1 tablespoon of butter
  • 1 large spoonful (approximately 20g) of vegetable oil
  • 5 and 1/2 cups of all-purpose flour

Note: Cup size is 100 ml.

Instructions:

  1. In a mixing bowl, combine water, sugar, salt, active dry yeast, instant yeast, vanilla sugar, egg, and butter.
  2. Gradually add the flour while mixing until a moist dough forms. Knead the dough until smooth and elastic.
  3. Cover the dough and let it rest for about an hour, or until it doubles in size.
  4. Preheat the oven to 180°C (350°F).
  5. Punch down the dough and divide it into small balls. Place them on a baking sheet lined with parchment paper, leaving space between each ball.
  6. Brush the tops of the pastries with beaten egg yolk for a shiny finish.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  8. Allow the pastries to cool on a wire rack.
  9. Enjoy your homemade Kouti with a warm cup of coffee or tea!
