Ingredients:

  • Pepper, salt, and smoked paprika (in small amounts)
  • Egg white
  • Milk
  • Potatoes

Instructions:

  1. Prepare the Seasoning:

    Mix pepper, salt, and smoked paprika in a small bowl until thoroughly combined.

  2. Create the Wet Mixture:

    Whisk the egg white with the milk until the mixture is smooth and consistent.

  3. Coat the Potatoes:

    Dip the potato slices in the egg and milk mixture, then coat them evenly with the spice blend. Shake off any excess seasoning. Repeat for all potato slices and let them rest for about 10 minutes.

  4. Heat the Oil:

    Preheat oil in a deep fryer to approximately 160°C (320°F). To test the oil temperature, insert a wooden chopstick; if bubbles form around it, the oil is ready.

  5. Fry the Potatoes:

    Carefully place the potato slices in the hot oil without overcrowding the pan. Fry until the edges turn golden brown. If they brown too quickly, reduce the heat slightly. Transfer the fried potatoes to a cooling rack to drain excess oil. Repeat with the remaining slices. Each batch should take about two minutes.

  6. Finish Frying:

    Increase the oil temperature slightly and fry the potatoes for an additional 30 seconds to achieve extra crispiness. Transfer them back to the cooling rack. Repeat with the remaining slices.

  7. Serve:

    Garnish with your preferred condiment and enjoy your perfectly seasoned and crispy fried potatoes!
