Homemade Krispy Kremes Recipe
Ingredients:
- 3 tbsp milk
- 3 tbsp boiling water
- 1 tsp dry active yeast
- 8 oz all-purpose flour (a little under 2 cups; weigh for accuracy)
- 1 1/2 oz sugar (about 3 tbsp)
- 1 egg
- 1 oz butter, at room temperature (do not melt)
- Dash of salt
- Enough oil to cover the bottom few inches of a wok or deep fryer
Glaze:
- 1/3 cup butter
- 2 cups confectioners’ sugar
- 1 1/2 tsp vanilla extract
- 4 tbsp hot water, or as needed
Instructions:
- Activate the Yeast: In a large measuring jug, combine milk and boiling water. Add a teaspoon of sugar and the yeast. Stir gently and let it sit in a warm place until the yeast foams up.
- Prepare the Dough: In a large mixing bowl, combine flour, remaining sugar, and salt. Cut in the butter until the mixture resembles crumbs. Add the beaten egg and yeast mixture, then mix into a smooth dough for about 5 minutes.
- Knead and Rise: Turn the dough onto a lightly floured surface and knead for 5-10 minutes until it becomes springy and bubbles form beneath the surface. Place the dough back in the bowl, cover with a cloth or plastic wrap, and let it rise in a warm place for about an hour until doubled in size.
- Shape and Prepare for Frying: After rising, place the dough on a counter and divide it into 4 pieces. Roll each piece into a rope about 1-1.5 inches wide. Cut into 1-inch strips, roll each strip into a ball, and place on a baking tray or wire rack. Cover with a cloth and let the doughnut holes rise while you heat the oil to 375°F (190°C).
- Fry the Doughnuts: Fry the doughnuts in batches until golden brown on each side, about 2 minutes per side. Avoid overcrowding the fryer. Drain on paper towels or a wire rack placed over cloth.
- Glaze the Doughnuts: While still warm, dip each doughnut into the glaze. To make the glaze, melt butter and stir in confectioners’ sugar, vanilla extract, and enough hot water to achieve a smooth, thin consistency.
- Serve: Enjoy the homemade Krispy Kremes warm and fresh.
