Vegetable Soup Recipe
Ingredients:
- 1/4 cup olive oil
- 1 yellow onion, finely diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 1 large potato, peeled and diced
- 2 carrots, sliced
- 1 cup corn kernels
- 1 cup peas
- 1 cup green beans, chopped
- 2 vine-ripened tomatoes, diced
- 4 cups chicken broth
- 2 cups V-8 vegetable juice
Instructions:
- In a large stockpot, heat the olive oil over medium heat. Add the diced onions, celery, and garlic, and sauté for 4-5 minutes until the onions are translucent and fragrant.
- Add the remaining ingredients to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook gently for 30 minutes until the vegetables are tender and the flavors are well combined.
