  • 2 ripe bananas, sliced
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • Whipped cream, for serving
  • Extra banana slices, for garnish

Instructions:

  1. In a medium-sized saucepan, mix the sugar, cornstarch, and salt until thoroughly combined.
  2. Gradually pour in the milk, whisking constantly to ensure a smooth, lump-free mixture.
  3. Place the saucepan over medium heat, stirring continuously, and cook for about 5-7 minutes until the mixture thickens and starts to bubble.
  4. Remove the pan from heat, then add vanilla extract and butter, stirring until fully blended.
  5. In a serving dish, layer half of the banana slices at the base and pour half of the pudding mixture over them.
  6. Repeat with the remaining bananas and pudding to create a second layer.
  7. Cover the surface with plastic wrap, pressing it gently onto the pudding to prevent a skin from forming. Refrigerate for at least 2 hours, or until fully set.
  8. Serve chilled, topped with a dollop of whipped cream and extra banana slices for a delightful finish.
