Healthy Stuffed Pepper Soup Recipe
Ingredients:
- 1 pound lean ground turkey or beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 bell peppers, diced (use green, red, or a mix)
- 1 can (14 oz) diced tomatoes, no added sugar
- 1 can (14 oz) low-sodium tomato sauce
- 4 cups low-sodium chicken or vegetable broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cauliflower rice (optional, for added vegetables and texture)
- Fresh parsley or grated Parmesan cheese for garnish (optional)
Instructions:
- In a large pot or Dutch oven, warm the olive oil over medium-high heat. Add the onion and garlic, sautéing for 2-3 minutes until fragrant and softened.
- Add the ground turkey or beef, cooking until browned. Break it apart with a spoon as it cooks. If using beef, you may want to drain any excess fat.
- Stir in the diced bell peppers, cooking for an additional 3-4 minutes until they begin to soften.
- Add the diced tomatoes (with juice), tomato sauce, broth, Italian seasoning, basil, oregano, smoked paprika, salt, and pepper. Stir well to combine.
- If you’d like extra texture, add the cauliflower rice at this point.
- Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes to allow the flavors to meld, and for the cauliflower rice (if added) to become tender.
- Taste and adjust seasoning, adding more salt or pepper if desired.
- Serve hot, garnished with fresh parsley or a sprinkle of grated Parmesan cheese for extra flavor.
