Healthy Stuffed Pepper Soup Recipe

Ingredients:

  • 1 pound lean ground turkey or beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, diced (use green, red, or a mix)
  • 1 can (14 oz) diced tomatoes, no added sugar
  • 1 can (14 oz) low-sodium tomato sauce
  • 4 cups low-sodium chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cauliflower rice (optional, for added vegetables and texture)
  • Fresh parsley or grated Parmesan cheese for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, warm the olive oil over medium-high heat. Add the onion and garlic, sautéing for 2-3 minutes until fragrant and softened.
  2. Add the ground turkey or beef, cooking until browned. Break it apart with a spoon as it cooks. If using beef, you may want to drain any excess fat.
  3. Stir in the diced bell peppers, cooking for an additional 3-4 minutes until they begin to soften.
  4. Add the diced tomatoes (with juice), tomato sauce, broth, Italian seasoning, basil, oregano, smoked paprika, salt, and pepper. Stir well to combine.
  5. If you’d like extra texture, add the cauliflower rice at this point.
  6. Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes to allow the flavors to meld, and for the cauliflower rice (if added) to become tender.
  7. Taste and adjust seasoning, adding more salt or pepper if desired.
  8. Serve hot, garnished with fresh parsley or a sprinkle of grated Parmesan cheese for extra flavor.
