Ingredients
- 3 eggs
- 100g sugar
- 90ml oil
- 125g cream or 1 cup yogurt
- 200g flour
- 50g finely chopped almonds
- 1 packet vanilla sugar
- 1 packet baking powder
- 1 apple, diced and lightly coated with lemon juice
- A handful of nuts (walnuts, almonds, almond flakes, oats, or other varieties)
- 2 tbsp brown sugar
Instructions
- Preheat your oven to 170°C (338°F).
- In a mixing bowl, whisk together the eggs, sugar, and vanilla sugar until well blended. Add in the oil and cream (or yogurt) and stir to combine.
- Gradually fold in the chopped almonds, flour, a pinch of salt, and the baking powder, ensuring a smooth batter.
- Dice the apple and sprinkle with a bit of lemon juice to prevent browning. In a separate bowl, mix the apple with the nuts, oats, and brown sugar.
- Pour the batter into a buttered and floured cake mold, then spread the apple and nut mixture evenly on top.
- Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
- For an extra touch, brush the warm cake with syrup or dust with powdered sugar before serving.
