Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. Let them sit at room temperature for about 15 minutes.
  2. In a large skillet over medium-high heat, add the olive oil. Once hot, carefully place the pork chops in the skillet. Sear for about 4-5 minutes on each side until they develop a golden-brown crust. Remove the chops from the skillet and set aside on a plate.
  3. In the same skillet, reduce the heat to medium and add apple cider, apple cider vinegar, brown sugar, Dijon mustard, ground cinnamon, and ground cloves. Stir well to combine and bring the mixture to a gentle simmer.
  4. Allow the sauce to simmer for about 5-7 minutes, or until it has thickened slightly. Stir occasionally to prevent sticking. If desired, you can taste the glaze and adjust the sweetness or acidity by adding more sugar or vinegar.
  5. Return the seared pork chops to the skillet, spooning the glaze over them. Cook for an additional 5-7 minutes, flipping halfway through, until the pork chops are cooked through (internal temperature of at least 145°F/63°C). Baste with the glaze as they cook.
  6. When the pork chops are fully cooked, remove them from the skillet and add the unsalted butter to the glaze. Stir until melted and combined, creating a rich, glossy sauce.
