  • 8 slices of prosciutto or bacon
  • 1 cup of cream cheese, softened
  • 1 tablespoon of honey
  • 1 teaspoon of fresh thyme leaves
  • Freshly cracked black pepper, to taste
  • Balsamic glaze, for drizzling (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Set your oven to 400°F (200°C) to prepare for baking.
  2. Cut the apricots in half and remove the pits. Set aside.
  3. In a bowl, combine the softened cream cheese with honey, fresh thyme, and black pepper. Mix until smooth.
  4. Spoon the cream cheese mixture into the hollowed center of each apricot half.
  5. Take a slice of prosciutto or bacon and wrap it around each filled apricot, covering the cream cheese completely.
  6. Place the wrapped apricots on a baking sheet lined with parchment paper, ensuring they are not touching.
  7. Place the baking sheet in the preheated oven and bake for about 15 minutes or until the prosciutto is crispy and the apricots are tender.
