Authentic Pasta Carbonara: An Incredible 5-Ingredient Recipe

  • 400g spaghetti or fettuccine
  • 150g pancetta or guanciale, diced
  • 3 large eggs
  • 100g Pecorino Romano cheese, grated
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente.
  2. In a frying pan over medium heat, cook the diced pancetta or guanciale until crispy, about 5-7 minutes. Remove from heat.
  3. In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of black pepper. Set aside.
  4. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta. Quickly add the hot pasta to the pan with pancetta. Toss to combine.
  5. Remove the pan from heat. Pour the egg and cheese mixture over the hot pasta, stirring quickly to create a creamy sauce. If too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Plate the Carbonara and top with additional Pecorino Romano cheese and freshly cracked black pepper.
