Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup mini marshmallows
  • 1/2 cup finely chopped nuts (optional)
  • 1/2 cup colored sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined, being careful not to overmix.
  6. Gently fold in the white chocolate chips, mini marshmallows, nuts (if using), and colored sprinkles.
  7. Use a cookie scoop or tablespoon to drop rounded mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Enjoy your Back to School Creamy Cookies! Store any leftovers in an airtight container.

Notes

  • For best results, use softened butter.
  • Do not overmix the dough once the flour is added.
  • Cookies will continue to bake slightly as they cool on the baking sheet.
  • Store completely cooled cookies in an airtight container at room temperature for up to a week.
