  • 1 lb Boneless Skinless Chicken Breast
  • 2 tbsp Dark Brown Sugar
  • 1 tbsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Ground Cumin
  • 1 tsp Dry Mustard
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 2 large Eggs
  • 3 cups Cooked Rice
  • 1/2 cup Japanese BBQ Sauce

Instructions

  1. In a mixing bowl, combine diced chicken with brown sugar, smoked paprika, garlic powder, cumin, dry mustard, salt, and pepper. Marinate for 10 minutes.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 3-4 minutes until browned and cooked through. Remove and set aside.
  3. Add another tbsp olive oil to the skillet if needed. Add cooked rice and stir-fry for 3-5 minutes until heated through and slightly crispy.
  4. Create a well in the center of the rice. Crack eggs into the well and scramble until just set. Mix eggs into the rice.
  5. Pour in BBQ sauce and stir for 30-60 seconds until it caramelizes and coats the rice and eggs.
  6. Return cooked chicken to the skillet. Toss to combine and cook for an additional 1-2 minutes to heat through.

Notes

  • Day-old rice yields the best texture.
  • Adjust seasoning to taste.
  • Chicken thighs can be used instead of breast for more flavor.
  • Other paprika, garlic, mustard, or oil can be substituted if unavailable.
  • Leftover BBQ meats or riced cauliflower can be used for variations.
