  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds. Lightly brush the outside with olive oil and place them in a baking dish.
  3. Cook the Beef: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onions and minced garlic until fragrant and translucent.
  4. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in the cooked rice, diced tomatoes, Worcestershire sauce, Italian seasoning, salt, and pepper. Cook for 2-3 minutes until heated through.
  6. Remove the skillet from heat and mix in ½ cup of the shredded cheese, reserving the rest for topping.
  7. Fill each bell pepper generously with the beef mixture, pressing down slightly to pack it in.
  8. Sprinkle the remaining cheese on top of each stuffed pepper.
  9. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired.
