- 1 cup Granulated Sugar
- 3 Eggs
- 2 cups Sweet Rice Flour
- 2 teaspoons Baking Powder
- 1/2 cup Butter (melted)
- 1 teaspoon Vanilla Extract
- 1 cup Cream of Coconut
- 1 cup Milk
- 1 cup Crushed Pineapple (canned, undrained)
- 1/4 cup Brown Sugar
- 1/4 cup Granulated Sugar (for topping)
- Preheat your oven to 350°F (175°C).
- Beat together the cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
