Birria Wings with Consomé

Ingredients

  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chili-garlic sauce (such as sriracha)
  • 2 teaspoons dark sesame oil
  • 1 teaspoon grated fresh ginger
  • 16 chicken wings, wing tips removed
  • Vegetable oil
  • Kosher salt
  • Fresh ground black pepper

Instructions

  1. Prepare the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, hot chili-garlic sauce, sesame oil, and grated ginger.
  2. Trim the Wings: Remove any excess skin from the edges of the chicken wings.
  3. Season the Wings: Lightly brush or spray the wings with vegetable oil, then season with kosher salt and fresh ground black pepper to taste.
  4. Grill the Wings: Preheat your grill to medium heat. Grill the chicken wings over direct medium heat for about 10 minutes, turning once or twice, until the skin begins to crisp.
  5. Apply the Glaze: Brush the wings with the prepared glaze. Continue to grill for an additional 8 to 10 minutes, turning and brushing with the glaze 2 or 3 more times, until the meat is no longer pink at the bone.
  6. Serve: Serve the wings warm and enjoy.

Alternative Baking Method

  1. Initial Bake: Preheat your oven to 375°F (190°C). Bake the wings for 45 minutes.
  2. Final Bake with Sauce: Increase the oven temperature to 400°F (200°C). Brush the wings with the glaze and bake for an additional 20 minutes, until the skin is browned and the sauce has thickened.
