- 3 lbs oxtails, trimmed

- 1 cup beef broth
- 1/2 cup red wine
- 2 tablespoons soy sauce

- 2 bay leaves

- 2 carrots, sliced
- 2 stalks celery, sliced
Directions:
- Season the oxtails generously with salt and pepper. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the oxtails and sear until beautifully browned on all sides, approximately 10 minutes. Transfer the oxtails to a plate and set aside.
- In the same pot, add the chopped onion, minced garlic, and ginger. Sauté until the onion turns translucent and the aromatics release their fragrance, about 5 minutes.
- Return the seared oxtails to the pot. Pour in the beef broth, red wine, soy sauce, Worcestershire sauce, and add the bay leaves and dried thyme. Bring the mixture to a gentle boil.
- Reduce the heat to low, cover the pot, and let the oxtails simmer for 2-3 hours, or until the meat is fork-tender and easily pulls away from the bone.
- About 30 minutes before the cooking time is complete, add the sliced carrots and celery to the pot. Allow them to cook until tender, absorbing the flavors of the broth.
- Before serving, remove the bay leaves from the pot. Arrange the braised oxtails on a platter, surrounded by the aromatic vegetables and the luscious broth.
