Irresistible Breakfast Poutine: Your Morning Comfort Food Fix

  • 23 medium russet or Yukon gold potatoes
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef or chicken stock
  • salt and pepper
  • 1 cup cheese curds
  • 24 eggs

Instructions

  1. Wash and peel the potatoes, cut them into even fries, about a quarter-inch thick. Heat oil to 350°F and fry the potatoes for 4-5 minutes until golden and crispy.
  2. In a saucepan over medium heat, melt the butter, whisk in the flour, stirring for about 2 minutes until golden brown. Gradually add stock, whisking until thickened, around 5-7 minutes, season with salt and pepper.
  3. In a serving dish, layer fries, sprinkle cheese curds, and pour hot gravy over. Ensure everything is coated well.
  4. In a non-stick skillet, heat a little butter and fry the eggs until desired doneness. Place the eggs on top of the assembled poutine.
  5. Serve immediately while hot.
