Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together.
  3. In a separate bowl, whisk together the egg, Greek yogurt, melted butter, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. Do not overmix.
  5. Carefully fold in the fresh blueberries, distributing them evenly.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
