Delightful no-bake Buddy the Elf Cookies filled with crunch and festive charm for the holiday season.

Ingredients

Scale
  • 4 cups Chow Mein Noodles
  • 12 oz White Chocolate
  • 2 cups Mini Marshmallows
  • 1/2 cup Maple Syrup
  • 1/4 cup Chocolate Syrup
  • 1/2 cup Milk Chocolate
  • 1 cup Mini Red and Green M&Ms
  • 1 piece Chocolate Pop Tart

Instructions

  1. Begin by lining a large cookie sheet with parchment paper to ensure easy removal of your Buddy the Elf Cookies later.
  2. In your large mixing bowl, add the chow mein noodles and set them aside.
  3. Using a double boiler, melt the white chocolate over medium heat, stirring continuously until it becomes smooth and glossy.
  4. Carefully stir half of the mini marshmallows into the melted white chocolate until they are mostly blended but still chunky.
  5. Pour the white chocolate mixture over the chow mein noodles in the bowl. Gently fold the mixture together until the noodles are evenly coated.
  6. Using a spoon or cookie scoop, portion out the mixture onto the parchment-lined sheet, forming small haystack shapes.
  7. Melt the milk chocolate using the same double boiler method, then drizzle it generously over each cookie, followed by maple syrup and chocolate syrup.
  8. Sprinkle the remaining mini marshmallows, mini red and green M&Ms, and broken pieces of Chocolate Pop Tart over the drizzled cookies.
  9. Allow the Buddy the Elf Cookies to sit at room temperature until the chocolate has completely set.

Notes

  • Chow mein noodles can be swapped with other crunchy cereals.
  • Use quality baking chocolate for best results.
  • Adjust the amount of maple syrup based on taste preference.
  • Hot fudge can be used as a substitute for chocolate syrup.
  • Milk chocolate enhances the flavor when drizzled.
  • Other chocolate candies can replace mini M&Ms.
