  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions

  1. In a large skillet, melt the butter with the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until it’s soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the garam masala, turmeric, cumin, and coriander. Cook for about 1-2 minutes to toast the spices.
  5. Add the chicken pieces to the skillet, tossing to coat them in the spice mixture. Cook until the chicken is browned on all sides, about 5-7 minutes.
  6. Pour in the crushed tomatoes, stir well, and bring the mixture to a simmer. Reduce the heat and let it cook for about 10 minutes.
  7. Stir in the heavy cream, mixing until fully combined. Allow it to simmer for another 5 minutes, letting the flavors meld together.
  8. Add salt to taste, adjusting the seasoning as needed.
  9. Remove the skillet from heat and garnish with fresh cilantro before serving.
  10. Serve the butter chicken hot over cooked rice or with warm naan.
