  • 2 cups Powdered Sugar, sifted

  • 2 tablespoons Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Harry Potter-inspired Sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a mixing bowl for about 2-3 minutes until light and fluffy.
  3. Add the room-temperature egg and vanilla extract to the butter mixture; beat on low until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Using a cookie scoop, portion the dough into 7-8 balls and place them on the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 12-13 minutes until lightly golden around the edges and slightly underbaked in the center.
  8. Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a cooling rack.
  9. While cooling, prepare the frosting by beating the softened butter, then gradually add the powdered sugar, butterscotch syrup, vanilla, and heavy cream until smooth and fluffy.
  10. Once cookies are completely cool, frost them and sprinkle with Harry Potter-inspired sprinkles.
