- 1 1/4 lb sea scallops, side muscle removed
- 1 1/2 tablespoons olive oil or vegetable oil
- 3 tablespoons butter
- 1–2 cloves of garlic, minced
- 2 tablespoons fresh lemon juice
- 2 teaspoons chopped fresh parsley or other herbs
- Salt and freshly ground black pepper, to taste

- Begin by patting the scallops dry with paper towels, ensuring they are pristine before cooking.
- In a large sauté pan or cast iron skillet over medium-high heat, heat olive oil and 1 tablespoon of butter until sizzling.
- Carefully add the scallops to the pan, ensuring they are not overcrowded, and sear for 1 1/2 – 2 minutes on each side until golden brown. Cook in batches if necessary.
- Once cooked, transfer the scallops to a plate and wipe out the skillet.
