  • ½ cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 2 medium-sized apples, peeled, cored, and diced (Granny Smith recommended)

  • ½ teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup caramel sauce (store-bought or homemade)
  • Optional: extra caramel for serving

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9×9 inch baking pan or line it with parchment paper.
  2. For the crust: In a medium bowl, mix graham cracker crumbs, melted butter, and 1 tablespoon granulated sugar until combined. Press mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool slightly.
  4. For the apple filling: In a large bowl, toss diced apples with lemon juice, cinnamon, and 2 tablespoons brown sugar. Set aside.
  5. For the cheesecake layer: In a large mixing bowl, beat softened cream cheese with ½ cup granulated sugar until smooth and fluffy, about 3-4 minutes.
  6. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract and sour cream until smooth and creamy.
  7. Assemble the bars: Pour half of the cheesecake mixture over the cooled crust, spreading evenly.
  8. Layer the apple filling evenly over the cheesecake mixture.
  9. Pour the remaining cheesecake mixture over the apples, spreading gently to cover.
  10. Bake for 35-40 minutes, or until the center is set and edges are slightly golden.
  11. Remove from oven and let cool to room temperature. Refrigerate for at least 3 hours or overnight.
  12. Once chilled, lift the bars out of the pan using parchment paper. Cut into bars.
  13. Drizzle with caramel sauce before serving. Add extra caramel if desired.
